Informacije koje sam ja našao ( u knjigama i na njemačkim stranicama ) ne potvrđuju ovo što si napisao. Baš naprotiv Reinheitsgebot je donešen (i u Njemačkoj je vredio do 1993.g.) da se spriječi da se pod nazivom pivo prodaje nešto načinjeno od surogata. U starom Babilonu kazna za prodavanje surogata pod pivo bila je smrt.
Ja sam probao, radio sam belgijski Wit (kod njega je 50% nesladovana pšenica i 50% ječmeni slad), i za mene to nije isto što i njemačko Weizen bier(koji se radi samo iz slada i to ;40% ječmeni i 60%pšenični). Weizen bier je puno bolji.
Ono što neki pišu: škrob je škrob. Nebi išlo, u postupku sladovanja dođe do promjene škroba (Njemci kažu da škrob bude klajsteriziran) tako da je piva nečinjena od slada ipak drugačija od pive načinjene od nesladovanih sirovina. U tome je i osnovna razlika između domaće pive ( načinjene u potpunosti u skladu sa Reinheitsgebotom) i onih piva koje se zovu pive a nisu pive (žuja i slične). Njima ne trebaju encimi iz slada, oni koriste encime iz jedne pljesni koji rade brže od encima iz slada.
Pšenične pahuljice se dodaju nekim pivama zbog okusa i pjene,ali ispod 5% od ukupnog usipka.
Još jedna informacija, netko je napisao da u hrvatskoj nema pšeničnog slada, ima ga iu IREKS - u, u Jastrebarskom, Kilogram je oko 9 kn, jasno pakirano po 50 kg.
Živjeli uz domaće pivo.

Why just barley, hops and water?

Since the very beginning of brewing history, the sources of sugar in beer brewing have varied widely, and even in Bavaria, where the increasingly popular Hefeweizen originated, wheat was an important brewing grain prior to the introduction of the Reinheitsgebot.

Hops are one of beer's most recent additions, with their first documented use in beer in Germany coming at around CE 1079. Prior to the introduction of hops into brewing, various herbs and spices were used as bittering agents in beer, and a combination was used to create gruit. Gruit, the exact constituents of which are unknown and probably varied depending on who put it together, likely contained such herbs as wild rosemary and bog myrtle, and Richard Unger notes that German brewers used such flavoring agents as ginger, anise, cumin, laurel, marjoram, mint, sage, and acorns in addition to gruit.

Eventually, the Latin Christian empire started by Charlemagne established control of the trade and sale in gruit, and this imperial right became known as the gruitrecht. Some suggest that the use of hops as the only bittering agent in German brewing came about as a way to protest Catholic rule, and that the Reinheitsgebot was effectively a political move against the Roman-Catholic Church, an effort to undermine the Church's monopoly on gruit.

Another reason for the Reinheitsgebot's introduction, and one to which it is much more widely attributed, is that the Duchy wanted to restrict the use of grains in brewing to preserve the ingredients used to make bread, in an effort to better serve the people. Barley is not much use in baking, but wheat and rye are; therefore, by eliminating grains other than barley from brewing, more bread could be made and the citizens could be kept healthier and happier.

Of course, the state's own brewers were exempt from the barley restriction, and the royalty continued to enjoy wheat beers until the order was later amended to include wheat and, once it was determined to be an additional ingredient, yeast. And so another possibility arises as to the source of the order: That the royals wished to reserve wheat beer brewing for themselves.

Whatever the actual motives for the Reinheitsgebot's introduction, its clearest intentions seem to be the regulation of the sale of beer in Bavaria. But, as its literal name suggests, it effectively became a "purity order": so long as the restrictions of the order were adhered to, the people had no cause to wonder just what sort of vile substances had been added to their brew.

While the Reinheitsgebot is often hailed as the world's oldest food purity law, it was not the first order of its kind. For instance, a similar law was enacted in Thüringen in 1434, preceding Duke Wilhelm IV's ruling by nearly a century. Called the Statuta thaberna, it stipulated that only hops, malt and water be used in brewing.

The difference: Besides the fact that the Statuta thaberna indicated only malt, rather than barley, could be used, the Reinheitsgebot has survived nearly intact for almost five centuries, and continues to be lauded by German--and non-German--brewers today.

može li meni neko reći da li ste koristili pšenične pahuljice iz DM-a u većim količinama recimo do 30% u ukupnom receptu? kakvo je to ispalo? kakav je okus u poređenju sa slađenom pšenicom?

Ja sam koristio one iz kauflanda,0,5 kg na 3,5kg slada i dobio 22 litre piva originalnog weizen okusa.Napravio sam i jednu veću šaržu s istim omjerima i tamo se već jako slabo osjeti pšenica.

Danas sam u Kaufladnu uzeo pšenične pahuljice:

Cijena- 4kn/0.5kg

Radit ću partial-mash u jednoj od idućih tura, da upoznam ukomljavanje, ispiranje, održavanje temperature komine..
Recept bi bio neki belgijski wit... ideja je tek pala pa se još moram informirati za detalje.

Zasad sam mislio ići na ukomljavanje 10-ak l slada i dopuniti vodom (s back ekstraktom) do finalnih 20ak l piva.
Koliko bi pahuljica trebao staviti za ~10ak l sladovine?
Jesu li dovoljne samo pahuljice il da idem na recept s još kojim sladom (npr. belgijski pšenični, pils, il neki treći..)?

Psenicne pahuljice su ti nesladjene zitarice. Da bi se osecirile potrebni su enzmi iz slada. Ja sam radio Wit sa 50% jecmenog slada i 50% pšenicnih pahuljica.

Neznan iz dma, ali jesan iz bia bia. 27%

Koristia sam i nesladjene siropvine za wit i lambic u omjeru 50/50
Dupli mash ce povecat sadrzaj beta glukana u sladovini ,pa bi bilo dobro uvest i glukan rest da ne bi sladovina bile pre viskozna

Posto psenicne pahuljice imaju veci postotak skroba i proteina od slađene psenice,samim tim pridodaju vecoj punoci okusa i drugacijem okusu,kompleksnosti,manje je delikatno i ima dosta naglaseno ostriji okus za razliku od slađene psenice.
Veci postotak skroba u sladovini, super stvar za neke kultre a za neke i nije bas.
